I doubled this recipe and have probably about the equivalent of 3 boxes of Eggos in my freezer. They are healthier and cook in the toaster just the same. I didn't have to go buy any of the ingredients, so you tell me what's the better deal. You don't have to have a belgian waffle maker- you can use a regular one and they will be just as tasty! Freeze these in freezer bags between layers of parchment paper or freezer paper and you can just grab one to throw in the toaster in the morning.
1 cup all-purpose flour
1 cup whole-wheat flour
1/2 tsp. salt
1/2 Tbsp. flaxseed meal*
1 Tbsp. white sugar
1 Tbsp. brown sugar
1 1/2 tsp. baking soda
1 3/4 cup buttermilk**
2 eggs, separated
4 Tbsp. butter melted and cooled
1/2 tsp. vanilla extract

*Here is an article on the health benefits of flaxseed. I try to throw a little bit into a lot of baked goods and even into cereal.
**If you don't have buttermilk, don't fret. You can easily substitute this amount of buttermilk with 1 1/4 cup milk + 2 Tbsp. white vinegar. Doubled, you will need 3 cups milk + 4 Tbsp. white vinegar.
2. Meanwhile, combine your dry ingredients (flours, sugar, flax, salt, baking soda). If you are doubling, you need a pretty dang big bowl.
3. In a separate bowl, mix the milk and egg yolks. Stir in the cooled butter and the vanilla. It is important that your butter is at least partly cooled or it will cook your egg yolks.
4. Now is a good time to preheat your waffle iron.
5. Stir the wet ingredients into the dry. It can still be a little lumpy, don't overmix.
6. Beat the egg whites until soft peaks form. Here is a video if you don't know what that means.
7. Gently fold the egg whites into the rest of the batter.
8. Spray your waffle iron with cooking spray.
8. In heaping ladlefuls, fill the waffle iron. These will bake in 3-5 minutes. In my experience, check at 3 minutes. When I cooked one for 5, it was way too long. Plus, if you are freezing them, they will slightly cook longer in the toaster.
Tip: Let your kid help in the kitchen. Evan is finally at an age where I am trying to let him actually help me. Just the little things. Can you help me pour this baking soda into the bowl? Can you put this in the sink for me? I have a feeling this is only the start of all kinds of great memories together in the kitchen.

awesome! my kids and I are both big fans of waffles/pancakes/bad for you breakfast carbs... and I cut all that out a week ago trying to eat healthy, but this sounds great! :)
